THE PROFILE OF THE WINES OF THE 2021 VINTAGE. ![]() The Chablis appellation covers 3150 hectares exclusively in the Yonne department, it is the northernmost part of the Burgundy vineyard. On the eve of the harvest, the vines were in excellent health. Chablis is a Village appellation of the Chablis vineyard, the AOC dates from 1938. The growth cycle of the vines maintained its advance of 15-20 days compared to averages for the past 20 years, with ripening complete in August. 2020 was therefore not, strictly speaking, a hot vintage it was, above all, an early vintage.
